Zucchini Bread

Zucchini Bread

1 C. oil

3 eggs slightly beaten

2 C. of sugar

2 C. of raw zucchini peeled and grated

2 tsp. of vanilla

3 C. of flour

1 tsp. baking soda

¼ tsp. baking powder

1 tsp. salt

3 tsp. cinnamon

1 C. chopped nuts (optional)

Blend first five ingredients. Stir in flour, baking soda, baking powder, salt, and cinnamon. Pour into two well-greased pans.  Bake at 325 degrees for 1 1/2 hours or until done.  Makes two loves!
