Date Filled Cookies

DATE COOKIES:
2/3 cup shortening
4 cups flour
2 cups brown sugar
1/2 tsp. cinnamon
3 eggs well beaten
1 tsp. salt
1 tsp. Baking Soda
1 tsp. nutmeg
FILLING:
1 lb. pitted dates chopped
1/2 cup sugar
Pinch of salt
1 cup cold water
Cream shortening with sugar, add eggs. Mix thoroughly. Sift flour. Measure and sift with baking powder, salt and spices. Add to creamed mixture until blended. Chill. Combine ingredients for filling, cook stirring constantly until blended. Chill. Turn dough on to lightly floured board. Roll 1/4 inch thick. Spread with date mixture. Roll like jelly roll. Wrap in waxed paper. Chill. Cut in thin slices, place on baking sheet. Bake in hot oven 425 degrees about 10 minutes.
Yields: 75 cookies.
