Sourdough Discard Waffles
1 c sourdough starter (or discard)
1 c plain yogurt
1 c all-purpose flour
1 T brown sugar
1/4 c butter melted and cooled
1 t vanilla extract
1 t baking soda
1/2 t salt
Combine sourdough starter, yogurt, flour, and brown sugar in a bowl the night before you plan to cook the waffles. Cover the batter and let rest in the fridge 8 hours to overnight.
Preheat waffle iron.
Beat egg in a large bowl when you are ready to make the waffles. Add melted butter and vanilla. Mix in baking soda and salt. Add the sourdough starter mixture and stir until the batter is well combined.
Pour batter into waffle iron and cook until golden brown.
